How to Make Beef Satay
This beef satay recipe is the main course-size version of a fabulous Thai appetizer: strips of beef marinated in Asian spices, skewered, and grilled for a truly amazing combination of flavors. With grilling season still in full swing, you can never have enough new and exciting ways to enjoy beef. Serve with mypeanut dipping sauce.

Ingredients
- *¼ cup packed brown sugar
- *¼ cup fish sauce
- *4 cloves garlic, crushed
- *2 tablespoons minced onion
- *2 tablespoons vegetable oil
- *2 tablespoons soy sauce
- *2 tablespoons ground coriander
- *1 tablespoon grated fresh ginger root
- *1 tablespoon ground cumin
- *½ teaspoon ground turmeric
- *⅛ teaspoon cayenne pepper
- *1 2-inch piece of fresh lemon grass (white part only)
- *2 pounds beef top sirloin, trimmed
- *4 12-inch long metal skewers
Directions
Step 1
In a bowl, combine the brown sugar, fish sauce, minced garlic, onion, vegetable oil, soy sauce, ground coriander, ginger, cumin, turmeric, and cayenne, stirring until the mixture is uniform.
Step 2
Using the side of a heavy kitchen blade, gently pound the lemongrass several times to release its oils; then, finely chop it and incorporate into the marinade.
Step 3
Slice the sirloin beef into strips approximately 2.5 inches in length and 1/8 inch deep. Mix the beef into the marinade for about 60 seconds until well coated, then cover and refrigerate for 2 to 4 hours.
Step 4
Get an outdoor grill ready at a high temperature and lightly grease the cooking rack.
Step 5
Take the beef out of the marinade, shaking off any excess liquid. Slide one-fourth of the meat onto each individual metal skewer and dispose of the used marinade.
Step 6
Place the skewers on the hot grill; sear for 1 to 2 minutes until the meat releases easily. Turn the skewers and grill until they are nicely charred with marks, about 2 to 2.5 minutes. Flip once more and cook for another 2 minutes until the center is slightly pink. Remove to a tray and let them sit for 2 minutes before eating.
