Warm up the olive oil in a pan using medium-low heat. Sauté the garlic and onion in the oil for about 5 minutes until they become see-through. Incorporate the garbanzo beans, cumin, spinach, and salt. Use your spoon to gently smash the beans while everything cooks. Keep heating until the dish is thoroughly warm throughout.
I followed the instructions exactly but used fresh spinach. Honestly, I found it a bit dull. Towards the end, we decided to add some Za’atar, which really transformed it. I’m not sure I’d make it again, but if I do, I’ll be sure to include the Za’atar.
